Meat Loaf Recipe Courtesy of Ina Garten. (Serves 4-6) Ingredients: 1/2 Tab. good olive oil 1 1/2 C chopped yellow onion 1/2 tsp chopped fresh thyme, or 1/2 tsp dried thyme 1 tsp. Kosher salt 1/2 tsp black pepper 1 1/2 Tab. Worcestershire sauce 3 Tab. Chicken stock or broth 1/2 Tab tomato paste 1 lb ground chuck (or lean ground beef) 1/4 plain. Dry bread crumbs 2 extra large eggs, beaten 1/4 C ketchup Directions: Pre-heat oven to 325 degrees Heat olive oil in skillet. Add the onions, thyme, salt, pepper and cook over med heat, stirring occasionally, for 8-10 minutes, until onions are translucent but not brown. Off the heat, add the Worcetershire sauce, chicken broth, and tomato paste. Allow to cool. In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with fork. Shape the mixture, into rectangle, on a baking sheet, covered with parchment paper. Spread the ketchup evenly on top. Bake for 1-1 1/4 hours, until internal temp is 160 and meatloaf is cooked through. (A pan of hot water in the oven, on the rack under the meat loaf, will keep the top from cracking) Serve hot……Enjoy! Twice Baked Potatoes Recipe courtesy of Lee Drummond Ingredients: 4 Baking Potatoes, washed 1 T canola oil or olive oil 6 T Butter, softened 1/2 C. Bacon, cooked and crumbled 1/2 C sour cream 1/2 C shredded cheddar or Jack cheese 1/2 C milk 1 tsp season salt 1-2 chopped green onions Pepper to taste Directions: Pre-heat oven to 400 deg. Rub potatoes with oil. Place on baking sheet, bake 1 hour(‘till tender) Place butter, sour cream and bacon bits in bowl and cream together. Remove potatoes from oven. Lower the heat to 350 degrees With sharp knife, cut each pot. In half lengthwise. Scrape out inside, leaving I/4 along rim, and place in butter mixture. Lay hallowed out shells on baking sheet. Smash pot. into butter, bacon and sour cream. Add the cheese, milk, season salt, green onions and black pepper, and mix well. (Important: if you plan to freeze the twice baked potatoes, do NOT add green onions.) Fill potato shells with the filling, abundant and heaping. Top each potato with a little more cheese and pop in oven until potato is warmed through, 15-20 min…Enjoy!
