Smothered Chicken

3 skinless, boneless chicken breasts; cut 3/4 of the way down in checkerboard design…#

Marinade Sauce: 

2T sour cream, 2 T Soy sauce, 3 minced garlic cloves, mixed together

 

*Place breasts in dish with marinade and keep in fridge, 20 min.

Chop 3 Yukon Gold potatoes into 1/4” slices, Chop 5 Whole White Mushrooms in 1/4” slices, and place in buttered 7x11 or 9x13 dish, potatoes first, mushrooms second, then marinated chicken third…

Bake at 350 for 35 minutes

While baking, make topping:

Chop 1 Cup cubed mozzarella, 1 C Parmesan Cheese and 1 egg

Mix thoroughly then spread on top chicken and bake additional 15 minutes.

 

Note:  After trying this dish, myself, I would cut chicken into cubes.  The size of your breast of chicken changes so much from one to the next, and that affects the cooking time.  I would simply cut all three breast into bite size pieces and double the Marinade sauce….

This dish, as is, will feed up to 6 people…

you could also add pea pods, broccoli, green beans etc. to it.

9x13 dish works better for cooking time..if using a 7x11, cook longer.
