Lora”s Meatballs over Rice

 

Ingredients for Meatballs:

1lb Hamburger

1/2 onion, diced

1-2 garlic cloves, minced

1/2 C Parmesan cheese

1/2 - 1 C breadcrumbs

2 eggs

Small handful chopped Italian parsley

2 T Worcestershire sauce, or 1T milk & 1T Worcestershire

1 tsp. Salt and 1/2 tsp. pepper

**Mix all ingredients together, in medium bowl

I use medium scoop for ea. Meatball which = 2 T (approx), place on cookie sheet, sprayed with non stick spray, side by side and bake in 400 deg. oven for 25-30 min. (They freeze beautifully, so make more and freeze 1/2, for another day, in Ziploc Freezer bag)

Ingredients for Sauce:

1 Can Cream of Mushroom Soup

1 Cup Sour Cream

*1 tsp Better than Boullion-Beef, mixed in 1 C hot water

Salt and Pepper to taste

**Start by adding Cream of Mushroom with Boullion water, on med-high temp, add Sour Cream, and whisk together, add salt and pepper. Add meatballs and let simmer, while rice is made.

White Rice (as directed on pkg), or 1 C rice added to 2 C boiling , salted water, cover, reduce heat and simmer 20min.  You can substitute egg noodles for rice, if desired….Enjoy!
