Mina’s Lemon Bars…….by Magnolia Table Cookbook

Ingredients:

Non-stick cooking spray or softened butter

2 C all purpose flour

2 sticks salted butter, melted

1/2 C powdered sugar, plus more for garnish

1/4 tsp salt

2 C granulated sugar

4 eggs, slightly beaten

5 T fresh lemon juice (about 2 lemons)

**Position a baking rack in the middle of the oven and pre-heat oven to 350 deg.  Spray a 9x13’ glass baking dish with baking spray. (Or butter)

**In med bowl, combine the flour melted butter, powdered sugar and salt. Use a fork to stir gently until just barely combined; mixing as little asm possible will result in lighter crust.  Use fingers to press into bottom of prepared dish.

**Bake until edges of crust are very lightly browned, about 20 min.

**Meanwhile, in a med. bowl, whisk together the sugar, eggs and lemon juice, until well blended.

**When crust is done, pour lemon mixture over top, return to oven and bake 15 min, then pull out and tent with tin foil, to prevent over-browning and place back in for approx. 15 min. more or until lightly browned and when center is set.

**Remove from oven and dust top with powdered sugar.  Let cool completely on cooling rack. (Cutting is much easier if cooled.)

**May be kept in air-tight container for up to a week, and frozen in freezer bag for up to a month.       ENJOY!
