Graham-Streusel Coffee Cake

 

Bake at 350 degrees for 35-40 min.

Ingredients:

Streusel:

1-1/2 C graham cracker crumbs

3/4 C chopped pecans or walnuts

3/4 C packed brown sugar

1-1/2 tsp. Grnd. cinnamon

2/3 C melted butter

Melt butter in small saucepan, take off heat and stir in graham crackers, walnuts, brown sugar and cinnamon…put aside.

Cake:

1 pkg. yellow cake mix

1 Cup water

1/4 C veg. Oil

3 eggs

Inn a large mixing bowl, combine cake mix, water, oil and eggs.  Beat on low speed ‘till moist.  Beat on med. speed for about 1-1/2 minutes; scraping sides.  Pour half the batter into a greased and floured 9x13 baking pan. Sprinkle half the streusel on top then carefully spread the rest of the cake mix over the streusel and sprinkle top with last of streusel. Put in 350 oven and bake for 35-40 min. Or ‘till toothpick comes out clean.  Cool for about 10 min. And drizzle with Powdered Sugar glaze.

Powdered Sugar Glaze:

1 C sifted powdered sugar, 1 tsp. Vanilla and enough water for drizzling consistency
