Recipes - 

Best Ground Beef Chili

Serves 6

 

Ingredients: 

2.5 lbs 85% grnd beef

2 tsp. Salt

3/4 tsp. bak. Soda

2 T veg oil

1 large onion, minced

1 red bellm pepper, minced

4 cloves garlic, minced

2 T ancho chili powder

2 T chipoltle chili powder

1 T grnd cumin

1 tsp. Grnd oregano

1/2 tsp ground coriander

1 tsp smoked paprika

1/4 tsp cinnamon (optional)

2 T cornmeal

3 C beef broth

1-28oz can crushed tomatoes

1/4 C tomato paste

1 T molassess (optional, if you like your Chile a little sweet)

1 T fresh lime juice

 

-In a large bowl combine the beef, salt, bak. Soda, and 1 T water. Using your hands, mix until evenly combined. Let sit on counter 20 min.

-In large pot over med. heat, heat the oil.Add the onions, garlic, and red pepper; cook, stirring frequently, until softened, 4-6 min.  Add the beef and increase the heat to high; cook, and break up into small pieces, until beef is browned, 10-12 min.—do not drain, you will skim fat off at end.

Add the ancho chili powder, chipoltle chili powder,  cumin, oregano, coriander, smoked paprika, and cinnamon; cook, stirring frequently, for 1-2 min. Until well combined and fragrant.

 

Stir in cornmeal, broth, crushed tomatoes, tomato paste, and molassess; bring to a boil.  Reduce the heat to low and simmer, covered for two hours.

 

Skim any excess fat off the surface of the chili (There will be quite a bit, don’t worryn about getting all of it, as it adds flavor.  Stir in lime juice, then taste and adjust seasoning, if necessary.

 

Freezer-friendly: Can be frozen up tto 3 months.  Before serving, defrost in fridge for 12 hours and re-heat on stove top over med. heat, ‘till hot

 

Cake-Like Cornbread

 

Pre-heat oven to 350 & grease a 9x13 pan

 

Ingredients & Directions:

 

Combine in lg bowl, all dry ingredients:

1 C cornmeal

3 C flour

1-1/3 C sugar

2 T baking powder

 

Stir in all wet ingredients *Just ‘till moistened

2/3 C veg. Oil

1/3 C melted butter

2 T honey

4 large eggs (beaten)

2- 1/2 C whole milk

 

Pour into prepared 9x13

Bake 45 minutes (‘till top of cornbread starts to brown & crack)
